HAPPY MONDAY & HAPPY NOVEMBER EVERYONE!!! What has everyone done this weekend? What’s your favorite hobby (other than reading of course 😉) What’s your new favorite find? I show you mine in the three things below:
Three things:
1.) I’m marinating mushrooms!! I love my vegetable salads and I love adding marinated mushrooms to the mix. I’m in the mood for a good chopped salad as we speak, in fact. I think that’s what I’ll have tonight for supper. YUM!! What’s your favorite kind of salad? Mine used to be ONLY Cesar salad (and I make an AMAZING one even better than restaurant-style) but I’ve burned out somewhat and am experimenting with all sorts of salad combos now. LOVE IT! I swear I could totally be a vegetarian if it wasn’t for my love of… well… meat. 😒 😂
2.) My landscaping is still a disaster area since Milton, and I’m just waiting for it to cool down so I can get out there, and pull out the dead and dying stuff, and have it looking clean again. Plant some things, and trim off all of the shredded leaves that are hanging on by a thread. But… there’s another tropical storm on the way, and while I don’t think it will do damage, I’m just not in the mood to get to work out there just for it to be all undone again.
3.) So I received this amazing Laneige berry lip balm as part of a gift basket, that I’m obsessed with. I love the smell, the flavor, the texture, and my lips feel amazing in the evenings when I don’t have any on, but am realize that my lips feel supple and not cracked or raw. That’s how I know this stuff works. P.S. HOLY MOLY they have a candy cane version, so I MUST buy this. I LOVE minty lip balms. So soooooothing. But anyway, back to my story: so then, I found THIS one on Amazon that looks identical, and the reviews say it’s an amazing dupe, and while I can say that the look and texture is just about right, there is no berry smell/taste about it at all. Like no real smell. Not bad, but not much of anything… and I really love the whole shebang. So I keep the boring one at my bedside for middle of the night needs, and the pretty one in my purse for daytime. 😉

This is my absolute favorite salad. I crave it!
Mandarin Almond Chicken Salad:
6 Tbsp mayonnaise
1½ Tbsp low-sodium soy sauce (or reg)
1½ Tbsp honey
1 Tbsp lime juice
1½ cups shredded rotisserie chicken (or cooked)
1 bag fresh spinach
1 (8-oz) pkg shredded cabbage
1 can mandarin oranges, drained
½ cup sliced almonds
2 green onions, sliced
Whisk together mayonnaise, soy sauce, honey, and lime juice in a large bowl. Add chicken, spinach, coleslaw, oranges, nuts, and green onions. Toss.
I also have a couple I love for fall/winter but they’re a little long. One is a chicken, roasted sweet potato, winter mix, pecan, goat cheese, apple, etc… and the other is chicken, bacon, broccoli, winter mix, cranberries, etc. Let me know and I’ll message them to you!
1. I can’t eat anything but bland stuff right now because I’m in the midst of a diverticulitis flare-up. I just had a plain piece of chicken breast and it was the best thing in the world, so I’m not doing too bad! Tonight I may go crazy and have a skinless, butterless potato!
2. We’re home most of the month since airbnb has slowed down. Our next booking isn’t until Thanksgiving. It’s been nice but I’m ready for more $$$!
3. I need so much landscaping and flowerbed help but I’ve just decided to let it go until closer to spring. And maybe until I can afford for someone else to do it!
I used to love ceaser salads also, but now I’m not much of a salad person. I was on a kick last year while dieting and basically just took any leftovers out of the fridge and put them on a bed of lettuce. 😂 I really like roasted veggies on it. Also, a burger broken up with lots of pickles and yes, even a drizzle of ketchup and mustard. With roasted potatoes on the side!
1. I am sinking like I’ve never sunk before under the weight of my kids’ schedules this year. I just keep telling myself, this is the last year and it will get better. (Oldest, license) I so hope it does. I, therefore, have no other hobbies at the moment, just trying to get big projects around the house done (which now takes like 6 months to move a bedroom) and go to the movie theater every now and then.
2. I finished a book and I loved it! It was The Most Wonderful Crime of the Year by Ally Carter and it was exactly what I hoped it would be.
3. I secretly hope for another quarantine type situation just so life will forcefully slow down. When is the world going to slow down? I can’t keep up. I would totally take school being 4 days on/ 3 off.
