I think it froze again last night at my place. This has been the coldest winter in a long time. 60s and 70s and then freezing at night. Grrrr.

In my mom’s version – she would have actually made the tomato sauce with a few cans of crushed tomatoes, or are they cans of whole tomatoes? And some tomato paste. She’s definitely a from scratch person.
Sounds fantastic! my mom made a good one too…sweeter than mine. She used tomato sauce & paste…simmered for many hours. maybe I should try that…

You bet!! This is sort of my mom’s recipe (not exactly – mine is a lazier version). 😉
So in the crock pot, I dumped 2 jars of marinara sauce (whatever your favorite brand is), I chopped up a TON of vegetables (small chopped pieces) – they vary each time I make this, but this weekend it was:
1 zucchini
1 yellow squash
1 green bell pepper
1 medium onion
1 whole carton of white mushrooms (I like bigger slices of mushrooms)
2-3 medium carrots
2-3 celery ribs (I find this is a must for flavor, even if you dont like celery it adds a nice brightness to the sauce. LOVE IT!)
I think that’s all for veggies.
Then, I threw in 1lb of lean ground beef and 1lb of sweet Italian sausage (sometimes I use spicy Italian sausage but I didn’t have any). I let the meat cook in the sauce at the same time (no pre-cooking it for me – though I know some prefer to, since they can drain the oils and fats from the meat before adding it to the sauce). I don’t worry so much about that. I love the flavors.
Also!! I break up the meat a ton so it is evenly distributed throughout and not chunky, and stir every once in awhile so the meat consistency is even.
I put in some oregano and other Italian herbs (kind of by eye… just a bunch of nice Italian herbs – but oregano is my star). And of course, black ground pepper. LOVE!!
I didn’t add any salt yet at the beginning because I prefer it to be cooking for awhile so I can taste it and decide at that time what it needs once the flavors have melded (and considering the jarred marinara is already pretty salty – I didn’t want to go overboard).
I added a bit of olive oil too (I LOVE olive oil) <--- again this just by eye. Was it needed? Who knows. LOL!!! 🤣 There was plenty of oil given off by the meats. But yum! Olive oil!! So that's it. P.S. At first, there was so much raw meat and veggies that even with the two jars of sauce, it looked like it was going to be too thick and turn into a meatloaf. I joked with my mom about that and said... well it's either going to be a sauce or a meatloaf and I love both. 😂😂😂 BUT!!! Once it got cooking, and the oils and the veggies juices starting going, it turned into an incredible sauce!!!! Thick and hearty, but to me... perfection!

3. My house has gone from a “Christmas war zone” (baby thingies – BIG + small, crammed bedrooms) to “I can eat on the table again”. ☺️
1. Just washed the new set of towels my kids gave me for Xmas. They’re bright red. Can’t wait to use them.
