THREE THINGS:
1.) I’m excited to be watching MEGAN while I build today’s list. I AM LOVING IT!!! Exactly what I expected but even better. I love the social aspect, how perfect it all seems, but not just the creepiness/protectiveness that becomes Megan (and all of the technology/AI stuff that is supposed to make things easier..), but about the real little girl that has bonded with her. HOLY MOLY! Great social commentary in all respects about kids and family dynamics and attachment/addiction to certain things as an easy quick fix.
2.) I made a ton of my roasted veggies for the week (I add these to all of my meals as a side, or in my salads – even in my Keto sandwiches – YUMMY!!). And my greek green beans. With Feta cheese.
3.) I watched a pretty good movie (it’s a true story) on Saturday called “Above Suspicion” (it was a book… one that I would have definitely devoured – drama thriller. She (an addict) lives a dark life in a trailer park with her abusive ex husband, and she becomes an informant. And then there’s the FBI agent she deals with). Definitely watch it to the very very end.

1. Speaking of green beans, I have a new go to fave that I probably make once a week because it’s so craveable. I swear it doesn’t matter what else I make, if the beans are on the plate, they’re the clear winner. Just spread a pre-cut, pre-washed bag of gb on a baking sheet and toss with olive oil, s&p. Roast on 425 for 12 minutes. Remove from oven and flip with a spatula. Top with (a minimum of) 2 tsp freshly minced garlic (not the jarred stuff) and a handful of sliced almonds and continue roasting another 5-7 minutes. They are sooooo good! Also, I’m going to need to know what veggies you roast and how you do them! I’ve been looking for a new “recipe”!
2. I’m going on month 3 with a bad back and I’m so sick of it. Saturday, my chiropractor put the whoop on me and I could barely walk that night. I spent all of yesterday in the hot tub. It’s better today but not enough to do anything productive. Guess I’ll just have to read all day. πββοΈ
3. We spent a ton on our flowerbeds last fall and have lost almost all of it between the freezes and the deer. And the deer are relentless. They’ve started going after my yucca now! Last year they took a single bite out of a cactus and decided it wasn’t for them and left the rest alone. Last weekend they decided to try again and dismantled it. Didn’t actually eat any of it, just took it apart. Devil deer, I swear. Now I’m looking a shrubs. Plain old box hedges. They have to be deer resistant (lol), freeze and heat tolerant, draught tolerant, and salt tolerant because I’m too lazy to turn off the water softener before I water. Is there even such a thing? Ugh.
Uggghhh yessss… the animals. At my old house, I tried every single year to start a garden, and every year, it would be eaten by the abundance of adorable bunnies we had. Or my tomatoes would get those huge worms. And my parsley would also get these parsley worms that would devour the whole plant overnight.
And whatever else wanted to take bites. And where we are now, we have gorgeous HUMONGOUS mango trees nearby (not my trees unfortunately) and they make the most delicious mangoes I’ve ever tasted. A neighbor was leaving for the week on vacation, and asked that we collect as many mangoes as we wanted, and also asked us to pick any off the ground because she was afraid the rats would take over her property if the ground mangoes (that the squirrels dropped from the trees) would attract them.
And you have to get to the mangoes before the squirrels do. They take bites out of so many of them. Grrrrr!!
My roasted veggies!!
Always a whole head of cauliflower (I cut into “steaks” or slices to have maximum exposure to the roasting process). These are my favorite of all (the roasted toasty flavor is incredible).
Of course I do Brussel sprouts, cut in half (once roasted, I add in some extra salt and pepper, and some bacon bits, and parmesan)
Broccoli too, but I tend to singe the delicate florets sometimes, so I’m still working on that.
And carrots (lots of colors here too if I find them)
I also do baby potatoes or fingerlings. The more colors the better.
Oh and delicata squash <--- MY FAVORITE vegetable ever. Everything is pretty simple. tossed in olive oil, salt and pepper. Sometimes I use paprika, or other spices (and garlic - but I'm not a huge garlic fan, so I only do it if others are eating over). They caramelize with the roasting, and the flavors of all of these veggies are out of this world delicious. For cauliflower, I always add the juice of one whole lemon, also.
Your green beans sound incredible.
My man and his sons refuse vegetables unless it’s corn or green beans. CANNED green beans. CANNED only. Can you believe that?
I assumed it was because the texture of fresh green beans is too crisp and firm for them, so I made instant pot green beans (nice and soft, super-steamed and perfectly overcooked like a canned green bean), and NOPE. They were not interested.
It has to be canned.
*sigh*
So yeah, I’m the only one that eats my plethora of roasted veggies every week (unless we have guests, and then they all eat them with me – except the boys, of course). LOL!! π
My husband and daughter were the same way with canned and I refused, REFUSED to give in to them! π They did like the slow cooked fresh with rotel and bacon that are as soft as canned though, so I did that. Now that it’s just my husband and me, he has to eat what I make and I got him hooked on the roasted gb. They are super garlicy though. I’m not a huge garlic fan either because most of the time it tastes raw to me, but this is one place I love it. I also do fresh green beans with a mint lemon dressing that is to die for. And for that you just microwave the gb in the bag. But your guys would hate them. π¬
I’ve never had delicata! And of course my store doesn’t have it. 100% agree about slicing the cauli. It does make a huge difference! How you tried flavored balsamic on it? My favorite is chili pepper balsamic. Yummm!
It’s seasonal, and it’s a small light yellow squash of perfection. Easy to cut into, nothing like spaghetti squash, and despite the perfect sweet taste, it’s low carb!!
Once it’s roasted though, holy moly. I wish I could get them year round.
